From our manufactory in Borek Szlachecki near Kraków, where since 2016 we have produced to a Belgian recipe: cocoa mass, cocoa butter, zero palm oil. Every batch passes audited IFS Food control, and the beans come from certified Rainforest Alliance and Fair Trade farms — because an intense flavour should never have a bitter origin.
72% cocoa is chocolate for people who read percentages. In 100 g there are only 28 g of sugar — half of what milk chocolate carries — but 8.6 g of protein and the full register of cocoa aromatics: roasted bean, dark fruit and a clean, short bitterness with no astringency. You know it from the first bite — and from the fact that your dessert no longer needs extra sweetening.
Half a kilogram is enough to make an impression. Classic truffles from a 2:1 ganache (200 g of callets + 100 ml of 30% cream) yield about 25 gift-worthy pralines; a dense, fudgy brownie takes 200 g; the rest vanishes into hot chocolate, which at 72% tastes like a dessert, not a drink. Melt in a bain-marie up to 50°C or in 30-second microwave bursts — you measure callets to the gram, so the recipe adds up every single time.

Ingredients
Cocoa mass, sugar, cocoa butter, fat-reduced cocoa powder, emulsifier: E322 (sunflower), natural vanilla flavouring. Cocoa solids 72% minimum.

How to use
Measure out the amount of callets you need and melt them slowly over a water bath or in a chocolate melter, stirring until smooth. For fountains and fondue, follow the quantity and temperature recommended in your appliance's instructions.
