54% cocoa means your dessert tastes of chocolate, not sugar — yet nobody at the table will call it bitter. It is the most versatile choice in our range: ganache at a simple 1:1 ratio with 30% cream, glossy glazes for cakes and tarts, moist brownies, and a fountain with a bold, grown-up profile. Callets melt evenly in a bain-marie or microwave, no chopping required. The 1 kg format covers a fountain, a pastry shop and a weekend of baking; 500 g is enough for a cake, a tart and a brownie from a single pouch.
